INGREDIENTS

  • Couscous 100 g
  • Hot Water 150 g
  • Pomegranate Molasses 20g
  • Olive Oil 30 g
  • Lemon Juice 20 g
  • Avocado cubes 60g
  • Pumpkin Cubes 50g
  • Cherry Tomato 50 g
  • Cucumber Cubes 100 g
  • Sliced Spring Onion 10 g
  • Feta Cheese 30 g
  • Tortilla Krispy Bread 10 g
  • salt 2 g
  • Sunflower Seeds 5g
  • Cumin Powder 1 g

PREPARATION

Prepare the Couscous Salad:

  • Put couscous in a large bowl and pour boiled water over it. Cover with a lid or a plate and set aside for 10 minutes.
  • Using a mixing bowl whisk together the lemon juice, olive oil, grenadine molasses, cumin salt and pepper.
  • Pour in the mixing bowl avocado cubes, pumpkin cubes, cherry tomato, cucumber cubes, sliced spring onions and the cooked couscous and stir together gently to absorb the sause.
  • Finish the salad in plate by adding the feta cheese on top and the backed tortilla bread and sunflower seeds and a drizzle from grenadine molasses.
