Creamy Avocado Soup

INGREDIENTS

  • Diced avocado 300 g
  • Vegetable stock 1000 g
  • Diced white onions 50 g
  • Garlic 5 g
  • Green chilly 2 g
  • Fresh coriander leaves 10 g
  • Lemon juice 20 g
  • Cumin 1 g
  • Black pepper 1 g
  • Sour cream 20 g
  • Olive oil 20 g
  • Salt 5 g

PREPARATION

  • In a saucepan, add white onions, garlic, green chilly, fresh coriander leaves. Season with cumin, salt, and black pepper. Stir continuously until it turns soft.
  • Add avocado and vegetable stock. Bring it to boil. Then cover and simmer over medium heat for 25 minutes.
  • Remove the lid. Add lemon juice and let it boil for one more minute. Put off the heat and blend with a hand blender to get a creamy smooth texture.
  • Serve the soup in a bowl by adding a spoon of sour cream on the top.
