Gluten-Free Buttermilk Pancakes

INGREDIENTS

  • 1 3/4 cup gluten-free baking flour
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 Tablespoon cane sugar
  • 2 eggs
  • 1 1/4 cup unsweetened almond milk
  • 1/2 teaspoon apple cider vinegar
  • 1/2 teaspoon vanilla extract

PREPARATION

  • In a large bowl, whisk together flour, baking powder, baking soda, salt and sugar.
  • Make a well in the center, add eggs, milk, apple cider vinegar and vanilla extract; mix until smooth.
  • Heat a lightly oiled frying pan over medium high heat.
  • Pour approximately 1/4 cup cup for each pancake on to griddle. Spread batter with spoon to make pancake a thinner style pancake.
  • Brown on both sides and serve hot.
