INGREDIENTS

  • Boiled Quinoa 250 g
  • Green Onions 20 g
  • Diced Cucumber 80 g
  • Edamame 30 g
  • Pomegranate Seeds 30 g
  • Fresh Mint 3 g
  • Beetroot Cubes 40 g
  • Apple Vinegar 30 g
  • Olive Oil 50 g
  • Salt 5 g

PREPARATION

Prepare the Quinoa Beetroot Salad:

  • To cook the quinoa put it with water over high heat for 20 min
  • Drain quinoa cool completely and keep ready to use.
  • In a mixing bowl combine olive oil, apple vinegar and salt to make the sauce.
  • Over the sauce, add green onions, diced cucumber, edamame, fresh mint and beetroot cubes mix all the ingredients together. Add quinoa and mix again.
  • In a serving plate, garnish with roman lettuce add over the quinoa mix and serve.
