Spiced Apple and Cranberry Cabbage

Ingredients:

  • 1 medium red cabbage
  • 2 apples
  • 100g dried cranberries
  • 2tbsp coconut sugar
  • 2tbsp date syrup
  • 3tbsp apple cider vinegar
  • 2tsp cinnamon
  • 2tsp nutmeg
  • Salt and pepper

PREPARATION

  • Pre-heat the oven to 200°C, fan setting
  • Slice the cabbage very thinly and chop the apples into small chunks. Mix all the ingredients together in an oven proof baking pot, cover and then place into the oven to bake for 1 hour stirring occasionally
