Super Food Salad

Preparation time: 15 minutes

Ingredients                        Net weight

Roasted sweet potato            50gm
Cooked chickpeas                 40gm
Broccoli                                  50gm 
Avocado                                 50gm
Poached egg                         1pc
Blanched kale                        50gm
Olive oil                                  2tbsp
Lemon juice                           15ml
Salt                                        3gm
Sakura mix                            2gm
Pomegranate (optional)        25gm

PREPARATION

•    Preheat the oven to 180°C. Wash the sweet potatoes and peel them. Cut the potatoes into 2cm cubes. Spread the cubes out on a baking paper, add rice oil, salt and pepper. Roast in the oven for about 20 minutes
•    Wash and cut broccoli and kale after blanching 
•    Make a poached egg 
•    Wash and soak the chickpeas before boiling 
•    Take lemon juice and olive oil and whisk together all the ingredients for the dressing and seasoning with salt and pepper
•    Mix everything together except the poached egg
•    Put the salad in a bowl, top with the poached egg and sakura mix
