Sweet potato baked samosa

Preparation time : 40 minutes
Serving net weight : 250g

Ingredients:

  • Sweet potato  500g
  • Diced onion  150g
  • Red chilly  5g
  • Red capsicum  30g
  • Garlic  5g
  • Olive oil  20g
  • Eggplant  30g
  • Cauliflower  3g
  • Black pepper  100g
  • Salt  2g
  • Garam masala  2g
  • Fresh coriander  20g
  • Spring roll pastry 12 sheets 

PREPARATION

  • Bake the sweet potato in an oven until fully cooked
  • In a frying pan, add the olive oil, diced onion, cauliflower, eggplant and garlic. Sauté till they are golden brown
  • In a bowl, mix the sweet potato and the sautéed vegetables. Add salt, garam masala, black pepper and fresh coriander
  • Fold the spring roll pastries after adding the stuffing and transfer to a baking tray. Bake for 10 minutes or until golden brown
  • Serve with sweet chili sauce
