Vegan Lentil Crepes

INGREDIENTS:

  • 1 cup leftover dal
  • 1 onion, finely chopped
  • ½ cup chickpea flour
  • 3 tbsp rice flour
  • Salt as required
  • Oil as required

PREPARATION

  • In a mixing bowl, add any leftover dal, chopped onions, chickpea flour and rice flour. Adjust salt as required because the leftover dal will also have salt in it. The Indian dal is fully flavoured with required spices; hence we do not need many ingredients in this recipe. Whisk it all together to make a smooth pancake consistency batter.
  • This batter does not require any fermentation and the crepes can be prepared immediately. Heat a pan and add a spoonful of batter. Spread it into a circle and shape it like crepes/pancakes. Drizzle oil around it. Cook both sides evenly. Take it off the flame and serve hot with any chutney or ketchup.
