Vegetarian Barley Soup

INGREDIENTS

  • Barley 100 g
  • Diced carrots 100 g
  • Diced tomatoes 100 g
  • Diced zucchini 100 g
  • Diced spring onions 30 g
  • Chopped green beans 30 g
  • Bay leaves 3 pcs
  • Cinnamon stick 1 pcs
  • Salt 5 g
  • Black pepper 1 g
  • Water 1200 ml
  • Fresh coriander leaves 3 g
  • Soaked chickpeas 30 g

PREPARATION

  • Pour the water into a saucepan. Add barley, carrots, tomatoes, zucchini, green beans, onions, chickpeas cinnamon stick and bay leaves.
  • Season with salt and pepper. Bring it to boil. Then cover and simmer over medium low heat for 35 minutes.
  •  Garnish with freshly chopped coriander leaves and serve hot.
